Last weekend, I attended my mother-in-law's 3rd Annual Chili Bowl Competition. I recall years ago when she just came up with the idea, an idea to bring people and family together for an event other than football. Usually the week after the Superbowl, she has hosted an afternoon devoted to chili. The first year of the chili bowl, I proudly took home a blue ribbon for the number one chili voted upon by a panel of judges. The following year, my chili verde didn't quite make the cut with so many good traditional chili recipes ahead of mine. For the 3rd Chili Bowl, I moved up in the ranks as a judge for this event along with a much more qualified food editor, a cook, and a fellow foodie like myself.

I found out that Libby's Spaghetti & italian meatballs has many large meatballs in their product. That was a nice discovery. The spaghetti noodles are very long and thick. There is quite a bit of tomato sauce in this dish, perhaps a bit too much and I noticed that the sauce did overpower the amount of noodles. This product is perfect for microwave cooking and that is how I chose to prepare it. I only had to empty the contents of the can into a microwave safe bowl, cover and cook on high for a few minutes. This dish smelled very good. It looked great! I did stir it well before serving.
Scalloped Ham and Cabbage: 1 1/2 cups cubed ham; 3/4 cup grated cheddar cheese; 3 tbsp. chopped onion; 3 tbsp. chopped parsley; 1 quart barely cooked and drained cabbage. To make a thick, white sauce, melt 6 tablespoons butter in a heavy skillet. Add 6 tbsp. flour and cook, stirring constantly until bubbly. Add 1 1/2 cup milk all at once, stirring with a wire whisk constantly as you add the milk. Continue cooking and stirring until bubbly and thickened. Season as desired.
